Octopus and chickpeas mousse

 

INGREDIENTS
Octpus celery, onion, white wine (sulphite), EVO oil, garlic, sea salt, organic chickpeas Double cream milk Taggiasca olives Organic lemon and peel fresh mint.

COOKING INSTRUCTIONS (you will need 2 saucepan)

Saucepan 1: chickpeas mouse. Pure 100ml of water bring to simmer then add Chickpeas stir till creamy, add some butter if you like.

 

Saucepan 2: empty the octopus bag and stir fry for a few minute. Plate first the mousse then add the octopus on top

SERVINGS
1 large serve or 2 small starter serves.

Slow cooked lamb shank

 

INGREDIENTS
Lamb shank, red wine (sulphite),  EVO oil, onion, carrots, sea salt, bay leaves, vegetarian stock, juniper berries.

Mushrooms and truffle oil risotto 450g circa

DESCRIPTION

Cardoncelli mushrooms Risotto.
Our risottos are carefully made by hand using traditional carnaroli rice and Parmigiano Reggiano. Add a tablespoon of water to the mix, stir, heat up and enjoy.
All our risottos are free from artificial preservatives, flavourings or colourings.

Vegetables stock 51% (water, and vegetable), carnaroli rice celery, onion, white wine (sulphite), Parmigiano Reggiano cheese (milk), butter (milk), EVO oil,  garlic, sea salt, black pepper, truffle oil. ALLERGY ADVICE: see ingredients in bold.

Roast Duck Leg

Slow  cooked (24hrs) British Beef ox cheek,  Organic Chicken stock, celery, onion, red wine, Vermouth (sulphite),  butter  EVO oil, garlic, sea salt, black pepper.
